Chicken Noodle Soup

Chicken Noodle Soup

To Start out I Cooked a whole chicken in the Instant Pot.
If you wanted to skip this step to make it a little easier you could easily buy a rotisserie chicken.

Put one cup of water in the bottom.

Add chicken breast side up.

These are the spices I put on the chicken, you can basically use whatever and however much you'd like.

Then set the instant pot to 60 minutes and let natural release.

Once the instant pot hits natural release start sautéing the carrots, melt 2 tablespoons of butter in pot.
Add Carrots - You can also add onions and celery at this time if you choose.

Add spices.

These are the spices I used on the carrots and in the soup.

Once chicken is done remove from instant pot and set on plate.

shred chicken.
Once the carrots are sautéed, add chicken to pot.
Add noodles, broth, and spices, then stir.
Bring to boil, then reduce to simmer for 20 minutes and you're done!

Ingredients:
  • 1 whole chicken - 4-5lbs
  • 2 tablespoons butter
  • 1-2 cups carrots (I choose to emit onions and celery for health reasons but you can easily add those in!)
  • 1 bag 12 oz wide egg noodles
  • 4 cartons chicken broth
  • 1 can veggie broth
  • Salt
  • Pepper
  • Onion Powder
  • Garlic Powder
  • Cumin
  • Celery Salt
  • Tumeric
  • Ceyene Pepper

Directions:
  1. Add 1 cup water to instant pot
  2. Put chicken breast side up in pot
  3. Set to 60 minutes and let natural release
  4. Saute carrots in 2 tablespoons melted butter
  5. Add chicken, noodles, broth, and spices (Add as much or as little spices as you choose) to pot
  6. Bring to boil then reduce to simmer for 20 minutes
  7. If eating immediately serve
  8. If freezing I remove the pot from the burner and let cool for awhile, then put in individual size containers and let sit until they reach room temperature, then freeze.

Instant Pot Spaghetti

Instant Pot Spaghetti  Start by turning your instant pot to the sautĂ© function, adding some olive oil and then once the screen says HOT add your hamburger and brown.  All of the spices I used. Once the hamburger is browned Turn the instant pot off. Once I turned the instant pot off I added the noodles, crisscrossing the noodles so they don't clump. Next I added the spaghetti sauce, water, and spices.  Then set the instant pot to manual for 10 minutes and did natural release. And finished product!  I turned the instant pot off, put the lid back on and let it cool a little once I mixed everything together. I used this for freezer meals. I was able to get 7 1 1/2 cup servings. I let these cool and then put them in the fridge and waited to put them in the freezer until the next day so it was completely cooled. Ingredients: Olive Oil 1 lb hamburger 2 jars pasta sauce 1 16oz box angel hair noodles 1 cu...

In honor of Crohn’s and Colitis awareness week I thought I would finally share an update on my health journey.

Highlands (Song of Ascent) O how high would I climb mountains If the mountains were where You hide O how far I’d scale the valleys If You graced the other side O how long have I chased rivers From lowly seas to where they rise Against the rush of grace descending From the source of its supply In the highlands and the heartache You’re neither more or less inclined I would search and stop at nothing You’re just not that hard to find So I will praise You on the mountain And I will praise You when the mountain’s in my way You’re the summit where my feet are So I will praise You in the valleys all the same No less God within the shadows No less faithful when the night leads me astray You’re the heaven where my heart is In the highlands and the heartache all the same O how far beneath Your glory Does Your kindness extend the path From where Your feet rest on the sunrise To where You sweep the sinner’s past O how fast would You come running If just to shadow me through the night Trace my step...
