Oven Baked Tacos

Oven Baked Tacos   This recipe is super easy and so perfect for a busy weeknight.  Start by browning your ground meat and onions. I used ground deer but obviously ground beef would work as well.  Once your meat is ground. add in water, taco seasoning, and salsa.  Simmer for about 10 minutes on medium low or until it looks about like this.  These are the shells I used.  Line a baking dish with the taco shells (the recipe could easily do all 10 shells but we didn't need that many. Sprinkle shredded cheese in the bottom of each one.  Fill til about half full with ground meat.  Add more cheese to the top  Bake for about 10-15 minutes at 400 degrees.  Serve with your favorite toppings and ENJOY!  Ingredients:  1lb ground meat  1/ 2 cup red onion  1/4 cup salsa 1 cup water 1TBS taco seasoning  10 taco shells  Shredded cheese  Directions: Preheat oven to 400 degrees.  Chop onions  Brown ground meat a...

National Peanut Butter Day

In honor of National peanut butter day coming up this Sunday the 24th, I thought I would share my favorite  peanut butter recipes from the blog.  I don’t know about you, but I never need an excuse for peanut butter, BUT I do love using these National (insert whatever here) day as a fun way to celebrate some of my favorite things.  To start us off I’ll share my favorite first! This is a little generic and certainly not all about peanut butter but my favorite is definitely  Chocolate Nobake Cookies (with peanut butter of course). Chocolate Scotcheroos

  Chocolate Scotcheroos  I’m sure you’ve all had or at least heard of scotcheroos, I mean we’re from the Midwest right? Is it even a family get together if there aren’t scotcheroos and Rice Krispies there?? Not at any of my family gatherings😂. Ingredients: 1 cup of sugar  1 cup light corn syrup 1 cup peanut butter  6 cups Rice Krispies  Frosting  1 cup semi sweet chocolate chips 1 cup butterscotch chips  Directions  Bring sugar and corn syrup to a boil and remove from heat. Add in peanut butter and Rice Krispies and stir together. Press into a a 9 x 13 pan (I put parchment paper down first so it’s easier cleanup😉) Melt semi sweet and butterscotch chips together and spread over bars. 

Peanut Butter Popcorn

  Peanut Butter Popcorn  I got this recipe from a family friend years ago and it is so delicious. Once you try it, you won’t be able to have just one handful! Ingredients: 1 cup popcorn 1 cup corn syrup  1 cup sugar 1 cup peanut butter 1 tsp vanilla  Directions: Pop your popcorn however you desire. Bring corn syrup and sugar to a bowl over medium heat, bowl for 2 minutes. (Be sure not to over boil) Add the peanut butter and stir to combine, stir in vanilla. Pour over popcorn and stir to coat. Enjoy!

Peanut Butter Bars

Peanut Butter Bars  Years ago they served these at a bible camp I went to and mom got the recipe, it’s been a staple ever since! Ingredients: 1/2 cup butter 1/2 cup sugar 1/2 cup brown sugar, packed 1/2 cup creamy peanut butter 1 egg, beaten 1 tsp vanilla  1 cup flour 1/2 cup quick oats 1 tsp baking soda 1/4 tsp salt 1 cup (6 oz) semi sweet chocolate chips Icing  1/2 cup powdered sugar 2 TBS creamy peanut butter 2 TBS milk Directions  In mixing bowl, cream butter, sugars, and peanut butter.  Add eggs and vanilla, mix well. Combine flour, oats, baking soda, and salt; stir into creamed mixture. Spread into greased 13 x 9 pan. Sprinkle with chocolate chips. Bake at e50 degrees for 20-25 minutes or until lightly browned. Cool for 10 minutes  Combine icing ingredients; drizzle over bars. Makes 3-4 dozen We had these while at Whispering Winds Bible Camp, July 2000

Homemade Taco Seasoning

The other day I whipped up another batch of homemade taco seasoning that I’ve been making for years so I thought I would share it with you. It’s super easy, last a long time, and doesn’t have any of the icky preservatives, etc. Here’s the ingredients, 1/2 cup chili powder 3 Tablespoons cumin 1 Tablespoon salt 1 Tablespoon finely ground pepper 1 Tablespoon paprika 2 teaspoons garlic powder 2 teaspoons onion powder 2 teaspoons dried oregano Mix it all together and you’re good to go! To use, brown 1lb. hamburger,  then add 2 Tablespoons of the taco seasoning mix plus 1/3 cup water and simmer until liquid has thickened, about 1-2 minutes. I hope you enjoy! 

Oven Roasted Asparagus

Oven Roasted Asparagus I just used this frozen asparagus from Trader Joes, the package says to microwave but I roasted in the oven at 400 degrees for about 30 minutes. I laid them out on the pan, drizzled with olive oil, and added all these spices and hot sauce. I can't eat asparagus with crohn's (Oh darn...😉😂) but Joe said they were really good! definitely spicy though, so if you don't do spicy leave out the hot sauce. Ingredients: One package Trader Joes Asparagus spears Olive oil Grated Parmesan Cheese Lawry's Season Salt Pepper Onion Powder Garlic Powder Hot Sauce  Directions  Preheat oven to 400 Spread Asparagus out on pan Drizzle with olive oil Sprinkle spices and cheese Drizzle hot sauce Bake for approximately 30 minutes or to your desired doneness

Smothered Burritos

Smothered Burritos This is a recipe my moms made for years thats in an old church cookbook, I wish people got together more often and made cookbooks, I can still remember when all the ladies from the church got together and made them! I was probably 7 or 8? I remember my friends and I getting to help with little things. Thats a fun goal I have for this year is putting together all of our family favorite recipes and making a cookbook for us all to have, Now I should probably get on that...😉. I tweaked a few things from the original recipe but for the most part, its still the same. Heres everything you'll need. Dice your onions, sauce them and brown your meat. Mix the sour cream and soups.  Add water, taco seasoning, salsa, rice (or beans) and mix together.  Add 1/3 cup meat mixture to 12 taco shells.  Roll up the shells.  Place all the shells in a greased 9x13 pan  Spread sour cream and soup mixture ...

Skillet Cookie Cake

Cast Iron Skillet Cookie Cake  Ingredients: 1 cup (2 sticks) butter, softened  3/4 cup sugar 3/4 cup brown sugar 1 tsp. vanilla 2 eggs 2 1/4 cups flour  1 tsp. baking soda 1/2 tsp. salt 2 cups (11 oz. package) semi sweet chocolate chips  Directions: Preheat oven to 350 degrees. Beat butter, granulated sugar, brown sugar, and vanilla until cream.  Add eggs; beat well. Stir together flour, baking soda, and salt; Gradually add to butter mixture, beating until well blended. Stir in chocolate chips. Rub softened butter around the inside of the skillet (I like to get some butter on a paper towel and rub it around). Press into a 9 inch or larger cast iron skillet. Bake for 30-40 minutes ( I baked mine uncovered for about 20 minutes and then covered with tin foil for the remaining time, checking periodically, every oven is different so you'll want to watch it closely after about 20 minutes. Now I can't take the credit for this creation, I saw it on Jeff Mauro's instagram (From The Kitchen on the Food Network!) it looked sooo good and I had to try! I'm so glad I did, it will be our new go to cast iron pizza recipe.  Ingredients:  ¾ Cup 1% Milk 2 teaspoons granulated sugar 1 package Instant Yeast 3 Tablespoons Olive Oil 2 and 1/3 cup AP Flour 1 tsp salt 4 more Tablespoons olive oil   3 Cups whole milk mozzarella, from a block, cut into cubes We also added some Colby jack cheese  2-3 cups of pizza sauce Tons of pepperoni Whatever other toppings you'd like, Joe did olives on his side and I did red onion and banana peppers on mine. Dessert Pizza  Ingredients: Dough -  1 tsp instant yeast 1 1/2 Tbsp sugar 2 Tbsp hot water 1/3 cup milk, warmed 1/4 tsp salt 2 Tbsp oil 1 1/4– 1 1/2 cups flour Cinnamon Butter Topping - 3   tablespoons   butter 3   tablespoons   granulated sugar 1   teaspoon   cinnamon Crumb Topping -  1/2 cup plus 1/3 cup bread flour 1/3 cup white sugar 1/8 cup brown sugar 4 TBSP Softened (But not melted) Butter  Icing - 1 cups powdered sugar 2 TBS milk 1/4 tsp vanila 1 tsp butter Directions: Combine yeast, sugar, hot water, and warm milk in a mixing bowl (I use a thermometer and make sure the temperature gets up to 110 degrees). Stir till yeast dissolves. Add salt and oil. Stir in one cup of the flour and mix well. Add enough remaining flour to make a soft dough. PB&C Cookie Sandwiches

PB&C Cookie Sandwiches Ingredients 1/2 cup butter, softened 1/2 cup sugar 1/2 cup packed brown sugar 1/2 tsp. baking soda 1/2 tsp. salt 1 egg 1 tsp. vanilla 1 cup flour 1/2 cup unsweetened cocoa powder 6oz peanut butter chocolate chips 6oz semi sweet chocolate chips 1/2 cup chocolate frosting 1/2 cup peanut butter Directions: In large mixing bowl beat butter on medium to high speed for 30 seconds. Add sugar, brown sugar, soda, and salt. Beat until combined.  Add egg and vanilla and combine.  Add flour and combine. Add cocoa powder and combine. Stir in peanut butter and chocolate chip pieces. Cover and chill dough for 2-3 hours or until easy to handle. Preheat oven to 375 degrees. Roll dough into 1 inch balls. Place 2 inches apart on lightly greased cookie sheet. Flatten cookies slightly with a glass dipped in sugar. Bake for 7-8 minutes or until tops are cracked and look dry Let cool on cookie sheets for 1 minute. Remove and cool ...

Meatloaf

Meatloaf Ingredients: 3 lbs Hamburger  3 Eggs 1/2 cup Italian breadcrumbs (or whatever kind you have on hand, crush up crackers would work too). 1/2 cup real bacon bits  1/2 - 3/4 cup chopped onion  2 TBS Brown Sugar 1 TBS Worcestershire  1 TBS Mustard 1 tsp salt 1 tsp pepper 1 Rap Garlic Powder  1/4 tsp thyme  1/4 tsp Tumeric 1/4 tsp cumin  1/4 tsp Ground Mustard  Directions: Preheat an oven to 350 degrees  Grease two muffin tins  Sauté bacon for a couple minutes Once bacons sautés remove from skillet and sauté onions for a few minutes in the bacon grease Add all ingredients into large bowl and mix together  Once all ingredients are mixed together use 1/3 cup measuring cup and scoop out into the muffin tins Cook for 30 minutes or until internal temperature reaches 165 degrees Once cooked, let sit for a few minutes and serve.
