Smothered Burritos


This is a recipe my moms made for years thats in an old church cookbook, I wish people got together more often and made cookbooks, I can still remember when all the ladies from the church got together and made them! I was probably 7 or 8? I remember my friends and I getting to help with little things. Thats a fun goal I have for this year is putting together all of our family favorite recipes and making a cookbook for us all to have, Now I should probably get on that...😉.
I tweaked a few things from the original recipe but for the most part, its still the same.

Heres everything you'll need.

Dice your onions, sauce them and brown your meat.
Mix the sour cream and soups. 

Add water, taco seasoning, salsa, rice (or beans) and mix together. 

Add 1/3 cup meat mixture to 12 taco shells. 

Roll up the shells. 


Place all the shells in a greased 9x13 pan 

Spread sour cream and soup mixture over the top, it looks a little like you've frosted a cake😉.

Sprinkle your cheese and bake! 

And then...as your cleaning up realize you forgot one shell😏, don't do that😂.

Once you take it out of the oven let it rest a few minutes and then serve with your favorite toppings! 

Ingredients:
12 flour tortillas
2 TBS of homemade taco seasoning or 1 pkg. of store bought
1/4 tsp turmeric
1/4 tsp cumin
1/8 tsp cumin
1/8 tsp ginger
1/8 tsp pepper
1/8 tsp salt
1 cup shredded cheddar cheese (We used Colby jack)
1/2 cup chopped onion
1 (16oz.) carton sour cream
2lbs ground beef
3/4 cup water
1 cup Mexican rice or 1 can chili beans (Since I can't have beans we did rice)
1/2 cup salsa
2 cans cream of chicken soup

Directions:
Preheat oven to 350 degrees
Cook rice as direction on package
Dice onion
Sauté onions for a couple minutes
Add meat and all spices except taco seasoning and brown
While meats browning mix sour cream and both cans of cream of chicken soup in a bowl
Drain
Add taco mix, water, rice OR chili beans, and salsa; mix well
Fill 12 tortillas with 1/3 cup taco meat mixture
Roll and place in a greased 9x13 pan (It may seem like they're not all going to fit, but its fine if they're scrunched together)
Pour sour cream/soup mixture over tortillas (Again, it may seem like there's alot, but thats why they're called smothered burritos!)
Sprinkle 1 cup shredded cheese over the top
Bake 35 - 45 minus depending on your preferred doneness
Let sit a couple minutes and then serve with shredded lettuce, cheese, salsa, and sour cream

Homemade Taco Seasoning

The other day I whipped up another batch of homemade taco seasoning that I’ve been making for years so I thought I would share it with you. It’s super easy, last a long time, and doesn’t have any of the icky preservatives, etc. Here’s the ingredients, 1/2 cup chili powder 3 Tablespoons cumin 1 Tablespoon salt 1 Tablespoon finely ground pepper 1 Tablespoon paprika 2 teaspoons garlic powder 2 teaspoons onion powder 2 teaspoons dried oregano Mix it all together and you’re good to go! To use, brown 1lb. hamburger,  then add 2 Tablespoons of the taco seasoning mix plus 1/3 cup water and simmer until liquid has thickened, about 1-2 minutes. I hope you enjoy! 

Instant Pot Spaghetti

Instant Pot Spaghetti  Start by turning your instant pot to the sauté function, adding some olive oil and then once the screen says HOT add your hamburger and brown.  All of the spices I used. Once the hamburger is browned Turn the instant pot off. Once I turned the instant pot off I added the noodles, crisscrossing the noodles so they don't clump. Next I added the spaghetti sauce, water, and spices.  Then set the instant pot to manual for 10 minutes and did natural release. And finished product!  I turned the instant pot off, put the lid back on and let it cool a little once I mixed everything together. I used this for freezer meals. I was able to get 7 1 1/2 cup servings. I let these cool and then put them in the fridge and waited to put them in the freezer until the next day so it was completely cooled.
