Instant Pot Chicken & Noodles

Instant Pot Chicken & Noodles





All the ingredients you'll need aside from the chicken.

Start by adding your chicken to the bottom of the pot 

Add in cream of chicken soup and butter

Set timer to 15 minutes and let natural release (You could also use frozen chicken and set to 25 minutes and natural release)


Add in noodles and spices


set to the soup setting for 5 minutes and let natural release

And finished product! If you wanted to kick it up a notch then serve with some homemade mashed potatoes

I was able to get 10 freezer meals out of this 

Ingredients:
  • 1lb of boneless chicken breast (chicken tenders were the first thing I grabbed so thats what I used)
  • 2 10.5 oz cans of cream of chicken soup
  • 1 stick of butter
  • 1 carton chicken broth 
  • 1 24 oz bag of frozen egg noodles (or you could make your own, I haven't gotten that brave yet😉)
  • Salt
  • Pepper
  • Onion Powder
  • Garlic Powder



Directions:
  1. Start by placing chicken in instant pot
  2. Pour cream of chicken soup and chicken broth on top
  3. Add stick of butter
  4. Set instant pot to 15 minutes and let natural release
  5. Once its done remove chicken and shred
  6. Add chicken back into instant pot along with noodles and spices (however much spices you prefer)
  7. Set to the soup setting for 5 minutes and let natural release
  8. Serve alone or over mashed potatoes 
This made 10 1 1/2 cup servings.
Cost was $12 for entire batch and $1.20 per 1 1/2 cup serving

Instant Pot Hamburger Helper

Instant Pot Hamburger Helper To get started you're going to turn your instant pot to the sauce feature. When it shows "Hot" on the display you're ready to add your olive oil and hamburger. Throw in all of your seasonings and brown the hamburger. Once its browned, add the noodles and more seasonings. Then add the two cans of beef broth and try to push all the ingredients down so there's not too much sitting on the surface. Then set the instant pot to cook for 8 minutes and do a quick release. Add in your milk, cheese, and party dip or sour cream if you have it. Turn it back onto sauté and stir everything together until it's melted. And serve! Life update + some new projects

Lifish update I’ll do a full “anniversary post” in July but I’ve just had a lot of thoughts lately about life, crohns, everything. To be honest I’ve had a lot of confusion and even discouragement which is not normally me. I’m coming up on two years and while I’m no where near how I was two years ago (I mean that was pretty bad...😳) I’m also nowhere near where I thought I would be, I remember thinking that on the year anniversary too and I kind of think that feeling has just progressed since then😕. I’m no better than I was 8 months ago to be completely honest with you and in some ways may or worse? I am so so thankful to have a diagnosis and know what’s wrong with me, but with that I thought would come answers and healing. I’ve had some answers and some healing of course, but there’s still really a lot of unknown! In the beginning I used to talk about finding my “new normal” well I’m here to tell you 2 years later I still haven’t found it😂. Learning to navigate something new ...
