Ham, Egg, & Cheese Breakfast Croissant



Ham Egg and Cheese Breakfast Croissant 



I put Joe to work helping me with this recipe. (See Deegan peaking over the table?😏)


Use an Emulsion blender, whisk or fork to mix eggs, milk, and spices together.

Pour into 9x 13 baking dish.

While Eggs are baking cut each croissant in half (I got one package at Walmart and one at Fareway, in the future I'll just use the round ones from faraway)
Add one slice of cheese and 3 slices of ham to the top half of the croissant.
Once the eggs have cooled cut them into 8 sections and add to the bottom half of the croissant.

Wrap in saran wrap and place in a freezer safe ziplock bag.



Ingredients:
  • 8 croissants (round ones were purchased at Faraway and rectangle were purchased at Walmart)
  • 1 package deli ham (I used 3 slices per sandwich and 1 package was just enough)
  • 8 slices cheese
  • 12 eggs
  • 2 tablespoons milk
  • Spices

Directions:
  1. Preheat oven to 400 degrees.
  2. Spray a 9x13 pan with cooking spray 
  3. You're going to start by mixing 12 eggs, milk, and spices (We used an imulsion blender and it worked soo well to get the eggs nice and frothy, if you don't have one of those you can use a fork or a whisk.
  4. Once you've got them mixed pour into pan and bake for 20-25 minutes
  5. While eggs are baking you'll need to cut the croissants in half
  6. Add one slice of cheese and three slices of meat to each croissant
  7. Once eggs are done remove from oven and let rest for 5 minutes
  8. Cut eggs into 8 sections and add egg to each croissant 
  9. Wrap in saran wrap and place in a freezer safe ziplock
  10. You can reheat from frozen but I would highly recommend placing in the fridge the night before so it is mostly thawed by morning, it makes the reheating process a little easier.
  11. To reheat in the Microwave wrap in a paper towel, heat for 45 seconds on one side and 45 seconds on the other
  12. To reheat in oven wrap in tinfoil and bake at 400 for 10-15 minutes

Instant Pot Hamburger Helper

Instant Pot Hamburger Helper To get started you're going to turn your instant pot to the sauce feature. When it shows "Hot" on the display you're ready to add your olive oil and hamburger. Throw in all of your seasonings and brown the hamburger. Once its browned, add the noodles and more seasonings. Then add the two cans of beef broth and try to push all the ingredients down so there's not too much sitting on the surface. Then set the instant pot to cook for 8 minutes and do a quick release. Add in your milk, cheese, and party dip or sour cream if you have it. Turn it back onto sauté and stir everything together until it's melted. And serve! Life update + some new projects

Lifish update I’ll do a full “anniversary post” in July but I’ve just had a lot of thoughts lately about life, crohns, everything. To be honest I’ve had a lot of confusion and even discouragement which is not normally me. I’m coming up on two years and while I’m no where near how I was two years ago (I mean that was pretty bad...😳) I’m also nowhere near where I thought I would be, I remember thinking that on the year anniversary too and I kind of think that feeling has just progressed since then😕. I’m no better than I was 8 months ago to be completely honest with you and in some ways may or worse? I am so so thankful to have a diagnosis and know what’s wrong with me, but with that I thought would come answers and healing. I’ve had some answers and some healing of course, but there’s still really a lot of unknown!
