Cheesy Ham and Potato Soup






All of your ingredients (except the ham) 


I started out by dicing a half an onion.

Then I dumped the onions, potatoes, ham, cream of chicken soup, chicken broth, and spices in and stirred them together. 

Then I set the crockpot to 5 hours on low.

Stir in the cream cheese and shredded cheese, Then set to an hour on low.

Once its finished just stir and serve! 



Guys...I realized when I went to dish up our bowls that I didn't put any garlic in! 😲 We put garlic in everything...so I had to add some to my bowl but it actually had plenty of flavor without it. 

Ingredients
  • 32 oz bag diced hashbrowns
  • 32 oz carton chicken broth
  • 15 oz can cream of chicken soup
  • 2 cups diced ham (I already had some that I had diced up in the freezer, you could do that or buy the pre diced)
  • 1/2 an onion
  • 8 oz block cream cheese
  • 2 - 8 oz bags shredded cheese 
  • 1 TBS pepper
  • 1 tsp salt
  • 1 tsp celery salt
  • 1 tsp paprika
  • 1 tsp chopped chives
  • 1 tsp white pepper
  • 1/2 tsp cumin
  • 1/2 tsp ground mustard 
Directions
  1. Dice 1/2 an onion
  2. Add onion, potatoes, ham, cream of chicken soup, chicken broth, and spices to crockpot.
  3. Stir and set crockpot on low for 5 hours - Stirring occasionally.
  4. Cube up the cream cheese and add to crockpot.
  5. Add shredded cheese to crockpot.
  6. Stir and set to 1 hour on low stirring occasionally.

Notes:
  • You could easily substitute bacon for the ham for a different flavor.
  • Add more or less of any of these seasonings, We thought it had the perfect amount of flavor without being too spicy.
  • I wanted there to still be some chunks of potatoes but if you wanted it to be a little mushier you could either cook longer or run an emulsion blender in it before you serve.
  • Its definitely cheesy but we didn't think it was over powering, You could easily do one bag of cheese instead of two.

Instant Pot Hamburger Helper

Instant Pot Hamburger Helper To get started you're going to turn your instant pot to the sauce feature. When it shows "Hot" on the display you're ready to add your olive oil and hamburger. Throw in all of your seasonings and brown the hamburger. Once its browned, add the noodles and more seasonings. Then add the two cans of beef broth and try to push all the ingredients down so there's not too much sitting on the surface. Then set the instant pot to cook for 8 minutes and do a quick release. Add in your milk, cheese, and party dip or sour cream if you have it. Turn it back onto sauté and stir everything together until it's melted. And serve! Life update + some new projects

Lifish update I’ll do a full “anniversary post” in July but I’ve just had a lot of thoughts lately about life, crohns, everything. To be honest I’ve had a lot of confusion and even discouragement which is not normally me. I’m coming up on two years and while I’m no where near how I was two years ago (I mean that was pretty bad...😳) I’m also nowhere near where I thought I would be, I remember thinking that on the year anniversary too and I kind of think that feeling has just progressed since then😕. I’m no better than I was 8 months ago to be completely honest with you and in some ways may or worse? I am so so thankful to have a diagnosis and know what’s wrong with me, but with that I thought would come answers and healing. I’ve had some answers and some healing of course, but there’s still really a lot of unknown!
