Breaded Ranch Chicken
Mix together your dry ingredients
Mix together your wet ingredients.
Coat chicken in the wet ingredients, then the dry ingredients, then place on the sheet pan
(I didn't have a wire rack so I improvised with some tin foil, It helped but I'll definitely get a wire one next time I make this, no where in town sold one!)
And the finished product! these tasted just as good warmed up in the oven the next day for leftovers.
Ingredients:
- 4 Large chicken breast approximately 1lb each
- 1/4 cup mayo
- 1/4 cup ranch dressing
- 1/2 cup bread crumbs
- 1/2 cup parmesan
- Salt
- Pepper
- Garlic
- Onion powder
- Paprika
Directions:
- Preheat oven to 400
- Mix together the dry ingredients in an 8x8 dish
- Mix together wet ingredients in a bowl (I added spices to this as well)
- Coat chicken in wet ingredients and then transfer to the baking dish and coat in the dry ingredients
- Place on a sheet pan with a wire rack that will keep the chicken raised slightly so the bottom half can get crispy as well.
- Bake for 20-30 minutes or until internal temp shows 165
- Let cool for a few minutes before serving
This made 8, 8 oz servings.
