English Muffin Breakfast Pizza
I used this recipe to make the English muffins, its mixed in the bread machine but you could easily convert it using a stand mixer or look on Pinterest for a simple English muffin recipe.
I found they don't have the holes necessarily like store bout English muffins but after looking around on Pinterest it looks like most of the homemade don't, eventually I might try to tweak it but we were happy with the flavor of them so I'm not in a hurry to change it.

These were very easy to assemble and I love that you know what ingredients are going into your meal.
Once the English muffins are done they'll look like this.
As you can see not quite the consistency on the inside but still had good flavor.
You can really add as much or little toppings as you'd like, I didn't go overboard with them so they'll be easy to reheat and eat.
Sausage Gravy instead of cheese sauce.
Ham instead of sausage.
This is just what I had on hand - Probably not the best for you..but still better than buying frozen breakfast pizzas😉.
Ingredients:
Ingredients listed in the English muffin recipe above (Or you could use store bought)
3-5 eggs
A splash of milk
1 lb. sausage (You could also do bacon or diced ham)
Cheese Sauce
Shredded cheese (Whatever variation you like - we had a mix of sharp cheddar and Colby jack that we shredded).
Salt
Pepper
Garlic
Directions:
I started by making the English muffins, once those were done I set them aside to cool
Brown Meat - set aside to let cool
Whisk together eggs, milk, seasonings and make scrambled eggs - set aside to cool.
Slice each English muffin in half and get your assembly line ready.
Spread a little cheese sauce on each one
Add ground sausage, ham, or bacon
Add scrambled egg
Top with shredded cheese
Put in freezer to flash freeze for 30-60 minutes
Wrap in serene wrap, place in ziplock and freeze until you're ready to eat.
When you're ready to eat cook in toaster oven or regular oven at 350 degrees for about 15 minutes.
Heat in Microwave for 1-3 minutes.
Notes:
I used a cast iron skillet over low-medium heat for the English muffins - The recipe says 5-7 minutes but I found it was closer to 10 each side, every stove is different though so be sure to check periodically.
You could also use sausage gravy instead of cheese sauce -We had some leftover from biscuits and gravy so I made up a few that way as well.
If you wanted a little kick to it you could also use queso instead of cheese sauce.
I did not "precook" the ones I made with ham since it was technically already pre cooked.
