Homemade Pizza



We decided to try our hand at homemade pizzas the other day - I could seriously eat pizza everyday and not get tired of it...There are so many variations of it you can choose from. We're a little limited in Osceola on options (although I do love all the places we have in town for it!) My favorite is Neapolitan style, clearly I can't get that in town or at home considering I don't have one of those amazing brick ovens but we decided to get as close as possible.

I LOVE the recipe I found for the bread maker, if you don't have one you could easily convert it to just using a stand mixer.

Here is the recipe I used to make the pizza dough in the bread maker.




This is the white sauce we used, I Just found it in the pizza section at faraway.






Ingredients:
Whatever you need for dough (Most likely you have it all on hand) 

White sauce pizza: 
White sauce
Cheese, we used a mixture of mozzarella slices, provolone slices, shredded asiago, crumbled feta, and a blend we had on hand of sharp cheddar and Colby jack - You can really use whatever cheese you prefer.
Grilled or ground chicken (We used ground) 
Garlic (We roasted garlic in olive oil in tin foil at 350 degrees for 45 minutes)
Olive Oil 
Salt
Pepper
Garlic Powder
Italian Seasoning

Red Sauce Pizza:
12 oz can tomato paste
Olive Oil
Water
Sugar
Salt
Pepper
Garlic 
Italian Seasoing
Pepperoni (We used pepperoni, you can add whatever meat toppings you prefer) 
Cheese, we used a mixture of mozzarella slices, provolone slices, shredded asiago, crumbled feta, and a blend we had on hand of sharp cheddar and Colby jack - You can really use whatever cheese you prefer.


Directions:
Follow instructions for pizza dough - We prebaked the crust for 8 minutes without the sauce.
Spray crust with olive oil
Sprinkle seasonings on and poke holes in crust with a fork
Prebake the crust for 8 minutes
Remove and add toppings in order that you prefer - We did garlic, sliced cheese, meat toppings, then shredded cheese - You can easily add veggies or whatever other toppings you prefer.

For the red pizza sauce:
add tomato paste to sauce pan
Mix in 1 cup of water
1-2 TBS Olive oil
1 tsp sugar
however much seasonings you want
Mix all together.

Bake at 500 degrees for 10-15 minutes or until its to your desired doneness.

Notes:
We did one on a pizza stone (If you don't have a stone I HIGHLY recommend getting one) and the other in a cast iron skillet - we still followed the same instructions for the skillet pizza.

One batch made two pizzas but then I also made another batch of dough and made 6 mini pizzas - You can make them smaller or larger, my goal was to be able to reheat them in the toaster oven for quick meals.

I added all the ingredients and flash froze the small pizzas - then wrapped in seran wrap and placed in a ziplock in the freezer.

Take out of freezer and put in the fridge the night before and then bake at 500 degrees for 10-20 minutes.

Instant Pot Hamburger Helper

Instant Pot Hamburger Helper To get started you're going to turn your instant pot to the sauce feature. When it shows "Hot" on the display you're ready to add your olive oil and hamburger. Throw in all of your seasonings and brown the hamburger. Once its browned, add the noodles and more seasonings. Then add the two cans of beef broth and try to push all the ingredients down so there's not too much sitting on the surface. Then set the instant pot to cook for 8 minutes and do a quick release. Life update + some new projects

Lifish update I’ll do a full “anniversary post” in July but I’ve just had a lot of thoughts lately about life, crohns, everything. To be honest I’ve had a lot of confusion and even discouragement which is not normally me. I’m coming up on two years and while I’m no where near how I was two years ago (I mean that was pretty bad...😳) I’m also nowhere near where I thought I would be, I remember thinking that on the year anniversary too and I kind of think that feeling has just progressed since then😕. I’m no better than I was 8 months ago to be completely honest with you and in some ways may or worse? I am so so thankful to have a diagnosis and know what’s wrong with me, but with that I thought would come answers and healing. I’ve had some answers and some healing of course, but there’s still really a lot of unknown!
