Chocolate Peanut Butter Fudge

Ingredients:
Peanut Butter Layer:
1 cup butter
1 cup creamy peanut butter
1 teaspoon vanilla
3 1/2 cups powdered sugar
Chocolate Layer:
7 ounces sweetened condensed milk 1/2 of a 14 ounce can
1 1/2 cup dark or semi-sweet chocolate chips
2 tablespoons butter

Directions:
Peanut Butter Layer – Combine the peanut butter, butter and vanilla in a glass bowl and melt in the microwave for 90 seconds. Stir to combine, it should come together very quickly and be smooth and creamy. Slowly add the powdered sugar a cup or so at a time. Stir to combine thoroughly. Grease an 8-9? pan with butter or line with parchment. Transfer the peanut butter fudge mixture to the pan and press into the pan.
Chocolate Layer – Combine the milk, the chocolate and the butter in a medium size glass bowl and heat in the microwave for 90 seconds. Stir to combine and heat another 15 seconds if needed. Stir until smooth. Pour over the peanut butter fudge.
Let cool on the counter for at least 4 hours before cutting, or chill in the refrigerator. Slice into bite size servings and store in an airtight container in the refrigerator for up to a week. Enjoy!

Notes

The fudge will set up at room temperature in a few hours. It is sliceable and perfect that way. The layers of fudge will sometimes separate if you attempt to slice it while it is super cold straight from the refrigerator. Set the fudge on the counter and let it warm at room temperature for a few minutes before slicing into bite-size pieces.

National Peanut Butter Day

In honor of National peanut butter day coming up this Sunday the 24th, I thought I would share my favorite  peanut butter recipes from the blog.  I don’t know about you, but I never need an excuse for peanut butter, BUT I do love using these National (insert whatever here) day as a fun way to celebrate some of my favorite things.  To start us off I’ll share my favorite first! Instant Pot Hamburger Helper

Instant Pot Hamburger Helper To get started you're going to turn your instant pot to the sauce feature. When it shows "Hot" on the display you're ready to add your olive oil and hamburger. Throw in all of your seasonings and brown the hamburger. Once its browned, add the noodles and more seasonings. Then add the two cans of beef broth and try to push all the ingredients down so there's not too much sitting on the surface. Then set the instant pot to cook for 8 minutes and do a quick release. Add in your milk, cheese, and party dip or sour cream if you have it. Turn it back onto sauté and stir everything together until it's melted. And serve! I don't know about you guys...but in our opinion you can't have hamburger helper without some bread and butter to go along with it😉. Ingredients: 1lb hamburger 8 oz elbow noodles 2 14 oz cans beef broth  1/2 - 1 cup milk  8 oz shredded ch...

In honor of Crohn’s and Colitis awareness week I thought I would finally share an update on my health journey.

Highlands (Song of Ascent) O how high would I climb mountains If the mountains were where You hide O how far I’d scale the valleys If You graced the other side O how long have I chased rivers From lowly seas to where they rise Against the rush of grace descending From the source of its supply In the highlands and the heartache You’re neither more or less inclined I would search and stop at nothing You’re just not that hard to find So I will praise You on the mountain And I will praise You when the mountain’s in my way You’re the summit where my feet are So I will praise You in the valleys all the same No less God within the shadows No less faithful when the night leads me astray You’re the heaven where my heart is In the highlands and the heartache all the same O how far beneath Your glory Does Your kindness extend the path From where Your feet rest on the sunrise To where You sweep the sinner’s past O how fast would You come running If just to shadow me through the night Trace my step...
